Before Opening my first bakery Couture Cupcakes back in 2008, I honestly couldn’t tell you how many cupcakes I baked trying to find the perfect recipe.
It needed to be light and fluffy but not too soft that it wouldn’t hold any filling and or icing on top, and I know there are hundreds of different Vanilla Cupcake recipes out there, but I was on a mission to create a recipe of my own that was super easy to make but tasted delicious too.
Vanilla cupcakes may seem a bit boring, but this recipe is a great one to have in your Recipe collection. It’s light and fluffy and not too sweet which is great for the kids and of course you too!
The base of the cupcake has simple ingredients, most of which you will probably already have in your pantry and fridge. I use Self Raising flour for this recipe so you don’t have to worry about running out to buy baking powder and baking soda.
When measuring my ingredients, I always use scales and that gives me a perfect result everytime and leaves minimal room for error. Be sure to sift all of your dry ingredients before hand and have your butter, eggs and sour cream at room temperature.
