Red Velvet Cake with Vanilla Cream Cheese Icing

The Recipe

Red Velvet cakes have been a favourite of mine ever since having my cake shop. With the bright and fluffy crumb, finished with a vanilla cream cheese icing, I would sneak out the back and eat a cupcake and savour every last crumb.

Back when I first started making Red Velvet cakes, the recipes always seemed so complicated, so when I decided to start experimenting with my own recipes, I knew I wanted it to be simple but still give a delicious and creamy cake in the end.

Firstly, you want to sift and mix your dry ingredients until they are combined. I usually do this in my mixer bowl and mix on low speed for about 30 seconds.

All of the dry ingredients need to be at room temperature, so if my eggs have come out of the fridge I place them in a warm bowl of water before cracking, and I place my buttermilk in the microwave until it reaches a warm to touch temperature. Be careful not to boil your buttermilk. After all my wet ingredients are a temperature I put them all in a measuring glass and whisk them together until they are all combined.

Then all you have to do is pour your wet ingredients into your dry slowly and mix on low speed for 1-2 minutes, it’s that easy. Tip 1. scrape down the sides of the mixing bowl and double check all of the wet ingredients are combined off the bottom of the bowl. Sometimes, you’ll have a few ingredients that haven’t incorporated so just mix these in with your spatula.

Divide your batter evenly and bake in your oven for 28-35minutes or until a toothpick comes out with a few crumbs on it.

Tip 2. Invest in an Oven Thermometer, you’ll be suprised how far off your temperature can be, and this can have a big effect on your cake.

This cake is so versatile and can be used for any occasion, just by changing the decorations. I’ve decorated this Red Velvet cake with fresh rosemary out of my garden and whole cranberries, which is perfect for Christmas Day.
